Cheesemaker, Lynher Dairies Cheese Company
Catherine Mead is the owner and director of Lynher Dairies Cheese Company in West Cornwall, the sole producer of Cornish Yarg.
First made thirty years ago by Alan Gray, Yarg’s name comes from the backward spelling of his name. The cheese was then made by the Horrell family on Bodmin Moor. When the Horrells retired from farming and cheesemaking in 2006, all the cheese production was then moved under Catherine’s direction, to the new Ponsanooth dairy. It’s not just the cheese that wins accolades – the dairy building has one too, a coveted RIBA award.
The dairy processes 2 million litres of milk, hand picks two tonnes of nettle and wild garlic leaves and produces more than 200 tonnes of cheese a year. The milk used to make Yarg comes from cows that are principally grass fed, which produces rich, creamy milk with a high protein content.
